The King Oyster, unlike it’s clustered cousins, has a more traditional mushroom shape, or ‘morphology’, producing mighty specimens of up to 12 cm in length, which are fairly common. With nutty, earthy notes – hard to quantify in words, this variety has a unique velvety, slightly chewy texture, but with a flavour you would come to expect in a fine choice edible, only intensified. This species holds up very well in long-cook dishes, due to its firm constitution making it an excellent meat, or seafood, replacement.
